Building a Simpler Diet

How should I eat to to free resources for use to other people?  What food choices should I make to best care for my family?

Guidelines in the More-with-Less cookbook suggest that I should consider increasing grains, legumes, vegetables, fruits and nuts while cutting back on the use of meat, poultry, seafood, eggs and dairy foods, and to completely avoid processed foods.  Grains and legumes are the standard diet for most of the world’s populations.  We, in North America, worry if we will get enough protein if we choose to eat this way.  The More-with-Less cookbook provides detailed information on protein requirements and tips on how to ensure complete protein needs are met.  There are strategies for no-meat meals, low-meat meals and alternate ways of providing and increasing protein in non-meat meals.  Extending the Table offers suggestions for meals based on diets from the worlds many cultures.  It also works to promote global understanding and to celebrate the variety of world cultures.
